Mumbai gets an authentic “taste of Canada” as top George Brown College chef celebrates Canada Day with new Indian educational partner

George Brown Chef School director John Higgins cooks up Canadian classics for IHM Mumbai officials and the Canadian Consul General in Mumbai

Toronto/Mumbai (July 1, 2007) — Chef John Higgins, Director and Corporate Chef of the world renowned George Brown Chef School in Toronto, did his country proud as he introduced guests at the Canada Day celebrations in Mumbai to a sampling of traditional Canadian delicacies. Chef Higgins, who was in India to work with George Brown’s newest international partner, the Institute of Hotel Management, Catering Technology & Applied Nutrition in Mumbai (IHM Mumbai), was invited to help Consul General Gary Luton ensure that the Canadian High Commission’s  Canada Day celebration offered an authentic “taste of Canada”.

In January 2007, the George Brown Chef School and IHM Mumbai announced the creation of a new Chef Training program, especially designed for students in India who are seeking dual-country credentials in the culinary arts. The joint program will provide graduates with an accredited Chef Training certificate from GBC and a certificate from IHM Mumbai. The program is scheduled to be officially launched in July 2007.

The agreement with IHM Mumbai is GBC’s second joint venture with an educational institution in India and is a key part of the college’s commitment to developing strategic relationships with the country’s top publicly accredited post-secondary institutions.

“It is truly an honour to be celebrating Canada Day in Mumbai with our new Indian partners and the Consul General of the Canadian High Commission in Mumbai,” said Chef Higgins. “Even though we are celebrating our national day, I view this event as a festival of our shared efforts to bring quality foodservice and hospitality education to the international forefront. We are very excited about our partnerships in India and we look forward to graduating workplace-ready chefs who will be coveted not only in their home country, but around the world as well.”

“We are delighted to have Chef Higgins and members of the George Brown team in Mumbai to celebrate Canada Day and our new partnership,” said Raj Kumar Saxena, Principal of IHM Mumbai. “George Brown College and the Mumbai IHM share a vision and commitment to provide an affordable, high quality, international education to Indian students interested in careers in hospitality.”

For the Canada Day event, Chef Higgins prepared Atlantic Salmon hot smoked on cedar planks, Prairie Wild Rice Salad with corn and cranberries, Apple Crumble Tart and Apple and Cinnamon Ice Cream with a splash of Canadian Ice Wine. The event took place on June 30 at the Hilton Towers in Mumbai.
