A Unique Selection of Programs
We offer students a variety of programs
at basic, intermediate and advanced levels. These have
been specifically designed to serve the needs of a growing
and changing industry hungry for qualified cooks,
chefs, bakers and pastry chefs. Students have the opportunity
to enroll in Apprentice, Certificate, Diploma and Post-Diploma
programs. The Chef's
School also offers specialized industry certificate programs
for those who are currently in the workforce who want
further upgrading or training.
Some of our programs are unique in Ontario, including Aboriginal
Cuisine. Our post-diploma Italian Culinary Arts program
features a three-month
placement in Italy and the Institute of Advanced Culinary
Arts offers advanced programming in areas where training
has not been available before
in Canada.

- Culinary
Management - H100
Launch your career as a
chef, cook or culinary manager with the two-year Culinary
Management diploma program.
Learn all aspects of food preparation, presentation and
management.
- Hospitality Services - H101
Successful completion of this program academically
qualifies people for entry into programs in The Centre
for Hospitality & Tourism
Management and The George Brown Chef School.

Launch your career as a chef or cook with the one-year
Chef Training certificate program and learn all aspects
of food products and preparation through demonstrations
by culinary professionals followed
by hands-on practice.
- Baking Pre-Employment

Receive practical, theoretical and hands-on training
in the areas of breads, pastry, cakes, decorating,
production management and plated dessert presentation.
- Baking and Pastry Arts Management - H113
This program is unique in Ontario, provides
students with both advanced patisserie skills and the
business skills necessary for success at the operator
level in the ever-changing food
service industry.
- Culinary Arts Italian

cuisine and the opportunity to participate in an
externship in Italy.
- Culinary Management
(Integrated Learning) - H116
You already know your way around a kitchen. You're energized by the possibilities.
You're ready to jump in and get maximum experience in the industry plus the
benefits of a George Brown Chef School diploma program. Well, have we got a
program for you! Our new Integrated Culinary Management program will jumpstart
your career like no other.
- Baker/Patissier Apprentice
We've earned an international reputation for developing baking
and pastry graduates who are capable, creative and leading-edge. Many
of these graduates have gone on to further certification and hold
prestigious positions in the baking industry. Launch your career as
a baker or pastry chef with a baker apprenticeship.
- Cook Apprentice
Launch your career as a chef or cook with a cook apprenticeship.
The basic program introduces you to the basic culinary skills
and techniques for preparing small and large quantities of food.
After another year of on-the-job experience, the advanced program
will teach you to further develop your skills, including practical
and theoretical instruction in à la carte food preparation,
pastry and desserts, contemporary cuisine and kitchen management.
