How is the Culinary Management
(Integrated Learning) Diploma Program - different from the
Culinary Management Diploma?
Responding to both the needs of the culinary industry and
students, George Brown Chef School is creating an innovative,
industry-driven curriculum. If you are curious, ambitious,
motivated and passionate about food and a career in the culinary
industry this program is for you.
Industry partners are looking for graduates with greater ‘real
time’ experience. New curriculum includes industry specific
topics such as current culinary trends, field trips to Canadian
artisan producers, and wine and dining clubs designed to teach
the fine art of table conduct.
As a student in the Culinary Management
(Integrated Learning) Diploma Program
you want to work with, and learn from, the best chefs
in Canada. Your practical cooking skills will be accelerated
through the emphasis on industry residency. As well,
many of your theory classes will be taught using state
of the art online learning.
The curriculum is right for you if you have some industry
experience or you have established industry goals and are
willing to work hard to achieve success. In order to gain
the industry edge offered by the Culinary Management
(Integrated Learning) Diploma Program
you will need the kind of maturity that makes you self-motivated
and disciplined in your studies.
What is the focus of the program?
Upon graduation you will be a ‘working graduate’,
combining the skills and confidence necessary to work in the
finest establishments in the culinary industry.
The two year program has two, 14 week periods of industry
residency in some of Ontario’s finest restaurants, hotels
and catering companies where you will master cooking and pastry
techniques through hands-on learning. During industry residency,
you will continue to learn through field trips and on-line
learning components.
In house Culinary Management courses are supplemented with
additional industry-inspired curriculum including Store Room
Management and the Foods of the World. You will be guided
towards your industry goals by a George Brown Chef School
Chef Coach assigned to mentor you through your two years.
Is the program recognized within the culinary industry?
Industry leaders have been applauding the efforts of George
Brown Chef School in creating the Culinary Management
(Integrated Learning) Diploma Program.
An Industry Validation Team has been struck to help craft
the program with members including the Oliver-Bonacini
Group, Four Seasons Hotels, Daniel et Daniel catering and
Sen5es.
Joan Monfaredi, executive chef at the Toronto Park Hyatt
Hotel, thinks that this program will become the industry standard
and a good source to draw from for employing graduates
of
excellence.
What kind of job will I get with
my Culinary Management (Integrated Learning) Diploma Program?
You will acquire the culinary credentials that will attract
industry attention and make you welcome in the leading kitchens.
Your skills will be in demand by the finest chefs in Canada
including Keith Froggett at Scaramouche, Jamie Kennedy at
J.K. Kitchen, Michael Stadtlander of Eigensinn Farm and Bruce
Hanna of the Westin Harbour Castle Hotel. Upon graduation,
you will have the skills and discipline to enter into the
position of commis in a great kitchen - you will be amazed
at what you can do.
Can I transfer into the Culinary
Management (Integrated Learning) Diploma Program from
another hospitality or culinary program?
Transfers from an existing program will be assessed on an
individual basis. To maintain equitability, transfer students
will have to meet departmental approval.
Are there other programs
at George Brown Chef School that I will be eligible to
study after graduating from the
Culinary Management
(Integrated Learning) Diploma Program?
After graduation you can continue to study in any of the
following programs offered at George Brown Chef School and
the following schools:
Food and Beverage Management, Hotel Management, Baking and
Pastry Arts, Food and Nutrition Management, Culinary Arts
Italian, GBCS Applied Degree - Hospitality Operations
Applied Degree, Ryerson University - Bachelor of Commerce.
What facilities are available
for students in the Culinary Management
(Integrated Learning) Diploma Program?
You will be learning in a full service restaurant, state-of-the-art
wine tasting and food production labs as well as with the
latest software for the culinary industry.
How big will classes be? Class size is limited to 24 students, allowing for a greater
interaction between you and your teacher.
What are the admission
requirements for the Culinary Management (Integrated Learning)
Diploma Program?
An Ontario Secondary School Diploma or equivalent is required.
As well, Grade 12 English - C or U general or advanced
and Grade 11 or 12 Math - C or U general or advanced.

Having successfully completed the basic admissions you will
then be asked to submit the following:
- Write a one-page,
approximately 250 word, hand-written essay on why you
want to be admitted to the Culinary Management
(Integrated Learning) Diploma Program and how it will
apply to your career path?
- In short paragraph form, state your short and long
term industry goals.
- Outline your industry experience.
Attach an industry reference to this document.
- Attach
any other materials which are relevant - resume,
sample work, menus, photo’s, accomplishments, other
post-secondary transcripts.
- Submit materials by date specified.
- All applicants
notified of application review with successful candidates
notified to schedule interview
appointment. One hour interview scheduled.
How will students be selected for the program?
Students will be selected based on grade ranking, evaluation
of supplemental admissions material and interview results.
Can I get advanced standing
in the Culinary Management (Integrated Learning) Diploma
Program?
Advanced standing was not possible in 2005 - 2006
since it was only the first year the program was
offered. However, advanced standing will be considered
for subsequent
years.
If you have successfully completed post-secondary programming
at a college or university in a related field, you may be
eligible for transfer credits. Requests for transfer of credits
will be considered on an individual basis by the director
of the program. Additional courses, or ‘bridging programming’ may
be required for advanced standing.
How much does the program cost per year?
The cost for the Culinary Management (Integrated Learning)
Diploma Program is $2938.00. There will be additional costs
for books, materials, chef uniforms and tools.

Applicants who meet the program requirements for admission
will be invited for an interview at the Chef School.
